Recipe: Lasagna Cups

Ingredients

  • 12 lasagna sheets

  • 500g ground beef (or your preferred protein)

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can (400g) crushed tomatoes

  • 2 tablespoons tomato paste

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • Salt and pepper to taste

  • 250g ricotta cheese

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • Fresh basil leaves for garnish (optional)

  • Olive oil

Instructions

  1. Preheat and Prepare:

    • Preheat your fan-forced oven to 180°C (350°F).

    • Grease a 12-cup muffin tin with olive oil or non-stick spray.

  2. Prepare the Lasagna Sheets:

    • Soak the lasagna sheets in boiling water for about 10 minutes or until they become pliable. Drain and set aside.

  3. Cook the Meat Sauce:

    • Heat a tablespoon of olive oil in a large skillet over medium heat.

    • Add the chopped onion and garlic, sautéing until they are soft and fragrant.

    • Add the ground beef, cooking until browned. Drain any excess fat.

    • Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Let it simmer for about 15 minutes, stirring occasionally.

  4. Assemble the Lasagna Cups:

    • Cut the lasagna sheets to fit the muffin tin cups. Place a piece of lasagna sheet in each cup, allowing the edges to hang over.

    • Spoon a tablespoon of the meat sauce into each cup.

    • Add a dollop of ricotta cheese, followed by another piece of lasagna sheet.

    • Repeat the layers (meat sauce, ricotta, lasagna sheet) until the cups are filled, ending with a layer of meat sauce.

    • Sprinkle shredded mozzarella and grated Parmesan on top of each cup.

  5. Bake:

    • Place the muffin tin in the preheated oven and bake for 20-30 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.

  6. Serve:

    • Let the lasagna cups cool for a few minutes before carefully removing them from the tin.

    • Garnish with fresh basil leaves if desired and serve warm.
