Ingredients
12 lasagna sheets
500g ground beef (or your preferred protein)
1 onion, finely chopped
2 cloves garlic, minced
1 can (400g) crushed tomatoes
2 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
250g ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Fresh basil leaves for garnish (optional)
Olive oil
Instructions
Preheat and Prepare:
Preheat your fan-forced oven to 180°C (350°F).
Grease a 12-cup muffin tin with olive oil or non-stick spray.
Prepare the Lasagna Sheets:
Soak the lasagna sheets in boiling water for about 10 minutes or until they become pliable. Drain and set aside.
Cook the Meat Sauce:
Heat a tablespoon of olive oil in a large skillet over medium heat.
Add the chopped onion and garlic, sautéing until they are soft and fragrant.
Add the ground beef, cooking until browned. Drain any excess fat.
Stir in the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper. Let it simmer for about 15 minutes, stirring occasionally.
Assemble the Lasagna Cups:
Cut the lasagna sheets to fit the muffin tin cups. Place a piece of lasagna sheet in each cup, allowing the edges to hang over.
Spoon a tablespoon of the meat sauce into each cup.
Add a dollop of ricotta cheese, followed by another piece of lasagna sheet.
Repeat the layers (meat sauce, ricotta, lasagna sheet) until the cups are filled, ending with a layer of meat sauce.
Sprinkle shredded mozzarella and grated Parmesan on top of each cup.
Bake:
Place the muffin tin in the preheated oven and bake for 20-30 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
Serve:
Let the lasagna cups cool for a few minutes before carefully removing them from the tin.
Garnish with fresh basil leaves if desired and serve warm.
